These courgettes taste wonderful in a baguette.
How to make:
Make a plain tomato and basil pasta sauce.
Slice about 3 courgettes.
Brush a griddle pan with a touch of oil and fry the slices of courgettes until soft enough to put a fork through them.
Once all the slices are cooked, place onto a plate and set aside.
Spread a little of the tomato sause into a small oven dish and place cougette slices on top, sprinkle some parmesan cheese over the top and slices of mozzarella (as you would a lasagna) and bake for about 20 to 30 minutes Gas mark 6 or 200c 😋
I was given this lovely book as a gift and can say I have found it very helpful and the recipes are very delicious and nutritious I would recommend it to anyone.
