What’s missing from your diet?

Whenever you make a salad, (and hopefully that’s everyday) try using a variety of different coloured vegetables, as they not only look great together, but also contain different phytochemicals, which help protect our cells from damage and disease.

As you can see from this picture, I made a salad consisting of:

Cucumber – The natural diuretic effect of cucumbers helps flush and cleanse the kidneys and bladder.

Spinach – The high fibre and cleansing effect of spinach, aids the digestive system by keeping things moving.

Red Peppers – Are high in Vitamin C and antioxidants, which helps to reduce the risk of infections.

Avocados – The healthy monounsaturated fats and polyunsaturated fats that they contain, promote a heathy heart.

Avocado oil – Rich and smooth, tastes great and has many health benefits.

Cherry Tomatoes – Are high in Lycopene, an antioxidant, which helps reduce the risk of cancer, heart disease, diabetes and sunburn.

Feta Cheese – Is lower in fat than most other cheeses and contains beneficial bacteria.

Eggs for breakfast anyone?

Stay away from all those sugary cereals, which can cause your blood sugar levels to rise and leave you feeling hungry again an hour later. Why not eat a couple of eggs instead. Eggs are wonderfully nutritious, low in fat, and will not affect your blood sugar levels like most cereals do.

Organic eggs are a natural God given food and will not raise your cholesterol levels either, as you may have been lead to believe. They contain many health benefits, which are far better for you than any man made food. So throw away those sugar laden boxes of cereal and enjoy a hearty egg breakfast instead.

Try them poached, boiled, as an omlette or scrambled and if you fancy a fried one just go easy on the oil. 🍳

1 Hour Chicken Broth

Why not give your immune system a boost with this quick and easy nourishing broth!

Ingredients you will need: Serves 3-4

  • 4 organic chicken thighs
  • 2 chopped carrots
  • 2 celery sticks
  • 2 leeks
  • 1 potato
  • small tin of tomatoes (227g)
  • 2 organic chicken stock cubes – melted in 2 pints of hot boiled water
  • pepper and oregano to season
  • about 200g of small shaped pasta (optional)

Method:

Place the organic chicken thighs in a large saucepan and seal them in a little water or oil. Add the chopped carrots, celery sticks, leeks, potato, and the tomatoes. Melt the chicken stock cubes in 2 pints of hot boiled water, pour over the vegetables and season with a little pepper and oregano. Cook for 1 hour until meat starts to fall off the bone. Once cooked, debone the chicken discard the bones and pop chicken pieces back into the saucepan. In a separate saucepan cook a little pasta, drain and add to the chicken broth. Or if you want a super healthy version add a tin of organic lentils or any other type of beans and enjoy. 😘
